Recipe of the Day: Paleo Salad Dressings



These dressings are part of my Paleo Detox Diet, but they are very tasty and can be used for lots of different salad recipes! The Carrot Ginger Dressing pairs very well with cashews or almonds, spinach, avocado, red onions, and chicken. The Cilantro Lime Dressing tastes good with romaine, cucumbers, mangoes, jalepenos, red peppers, and fish.





            Detox Carrot Ginger Dressing              



Ingredients

1 Large Carrot, Chopped

2 Tbsp Ginger Root, Minced

1/4 C Sweet Onion, Chopped

2 Garlic Cloves, Minced


1 Tbsp Sesame Seed Oil


3 Tbsp Olive Oil

1/4 C Water

Salt and Pepper, to Taste


Directions


Pulse the carrot, onion, garlic and ginger in a blender until finely chopped. Scrape down the sides, add the sesame seed oil and whiz together. While the blender is going, slowly drizzle in the olive oil and the water. Season with spices. Serve immediately or store in fridge for several days. 




            Paleo Cilantro Lime Dressing                 



Ingredients

1/4 C Fresh Cilantro

2 Cloves Garlic, Minced

1 Tbsp Ginger Root, Minced

1/4 C Honey

1/4 C Lime Juice

1/3 C Olive Oil

1 Tbsp Paprika (opt)

1 Tbsp Onion Powder (opt)

Salt and Pepper, to Taste


Directions

Pulse the cilantro, garlic and ginger in a blender until finely chopped. Scrape down the sides, add the honey and lime juice and whiz together. While the blender is going, slowly drizzle in the olive oil. Season with spices. Serve immediately or store in fridge for several days.
