This recipe is delicious and ridiculously easy to make. I
replaced mayo with avocado for a healthier version of the traditional snack -
plus it adds a nice, creamy texture to the egg yolk. The combination of spicy
cayenne and crunch celery makes this a fulfilling treat that is high in protein
and nutritious.

Scoop out and toss out half of the yolks. Spoon the remaining yolks into a small bowl and combine with avocado, celery, onion, parsley, spices, and a dash of salt and pepper. |
Mash together ingredients in the bowl, thoroughly mixing avocado and egg yolk. |
Spoon yolk mixture back into boiled eggs. Add a dash of paprika and enjoy! |
