Skinny Recipes: Weekend Brunch

It's the weekend, and nothing is better than sleeping in and having an early afternoon brunch.   This recipe is paleo friendly (if you skip the cheese on the omelet), low carb, and gluten free. Total calories: 350; Total fat: 12 g; Total  carbs: 1. 

Low Fat Pork Sausage

8 oz. Extra Lean Ground Pork
1 tbls. Black Pepper
1 tsp. Rosemary
1 tsp. Thyme
1 tsp. Paprika
1 tsp. Nutmeg
1 tbls. Garlic Salt
1 tbls. Splenda Brown Sugar Mix
Olive Oil Spray

1) Combine all ingredients (except olive oil) in a bowl and mix together with hands. Form into 8, 1/2" thick patties
2) Coat cast iron skillet or frying pan with one spray of olive oil, heat on medium-medium high. 
3) Add patties to skillet, flipping once or twice until edges are browned and inside is no longer pink. 
Serving Size: Two patties - 120 calories; 7 g fat; 0 carbs

Spinach and Mushroom Omelet

1 c Egg Whites
1/2 c Raw Spinach Leaves, chopped
1/2 c Cremini Mushrooms, chopped
1/8 c Low-fat Cheddar Cheese (optional)
2 tbls green onions, chopped
1 tsp dill
1 tbls garlic salt
1 tbls black pepper
1 tbls paprika
Olive Oil Spray

1) Heat frying pan to medium high heat, coat with two sprays of olive oil. 
2) Add egg whites to pan, sprinkle garlic salt, pepper, paprika over. Reduce heat to medium. 
3) Once eggs have set and are no longer runny (approx. 8 minutes), add the remaining ingredient to one side of the pan, on top of eggs. Use a spatula to fold the plain side over the top, cook for two or three more minutes, then serve. 
Serving size: One omelet - 180 calories; 5 g fat; 1 carb
